Zucchini Baked Oatmeal

It’s that time of the year again, zucchini time! Gardens are bursting with it and I am constantly looking for different ways to use it. I am certainly not the first person to put it in oatmeal, but here is my version of a baked oatmeal with zucchini. I normally don’t eat veggies in the morning and find this is a good option to get some green into my diet first thing. Bonus – my daughter eats it too but for a more toddler friendly version, you can replace the walnuts with hemp seeds for extra nutrition as the walnuts are a choking hazard for little ones.

Ingredients:
2 cups of rolled oats
2 cups of milk/milk alternative of your choice
1 tsp cinnamon
2 tbsp brown sugar
1 cup grated zucchini
¼ cup chopped walnuts
2 tbsp brown sugar
¼ cup raisins or chopped dates
Directions:
1. Preheat oven to 400°F.
2. Lightly grease an 8-inch baking pan with oil
3. Combine all ingredients together in a bowl and mix well
4. Pour into prepared baking dish and bake in a preheated oven for 30-35mins or until oatmeal mixture is no longer wet
5. Serve warm topped with more milk. This recipe also reheats well. Just top with milk of your choice and reheat in the microwave.
